In which Nick explains variables in the fermentation process. Took 2 viewings for me to really understand, probably since the terminology is a bit foreign to this layman. Really brings home the industrial and art aspects of winemaking--using process control, along with a lot of experience and technical knowledge, to produce desired characteristics in a wine. Didn't get that from a standard winery tour I took, couldn't see what was going on inside the big stainless steel tanks, nor did they explain....
